Site level migration In this type of migration, you are able to migrate the content site-wise which means you directly right click on the source site and click on "Copy Site", then go to the right side window, choose the targeted site and click "Paste Site Content >> All Site Content". Document level migration Before starting document level migration, you need to ensure that you have created the targeted site already. In this migration, you should migrate from On premises List or document library to SharePoint Online List or document library, or Announcement to SharePoint Online Announcement like this. Once your migration is completed, go through both the sites and check if everything is migrated correctly or not. You may also confirm through log file under Metalogix tool.
