There is nothing like Empty project MVC because the all the default folders and files are important to run an MVC project. But you can still remove the scripts and content folders. In .Net Framework 4 select MVC 3 Web Application which will open the templates window. From there you can select empty projects.. Refer tutorial from asp.net..
