I think a more common term would be industry as in insurance industry. I assume that it would help to read material about the insurance industry; it does not need to be about software for the industry. So in other words start with Insurance in the Wikipedia and then look for material related to that. That article says that the most complicated aspect of the insurance business is the Actuarial science of ratemaking. If a requirement for the position is statitics then Actuarial science is definitely a big part of the position.

Domain means knowledge related to a specific industry such as Banking Finance Insurance Healthcare and so on. Each of these industries has their specific terminology so when a client asks you do you have Finance domain knowledge that means the client expects you to know what a balance sheet is in Finance and other related terms they use in their day-to-day operations and applications.
